Chicken & White Bean Chili recipe form Sept Enrichment 2008

Chicken & White Bean Chili Easy Quick version

3 cans of Northern White Beans-drained
1 16 oz jar of salsa
1 16oz can chicken broth
1 12.5 oz Costco can chicken
Heat together and serve with chips and top with tomatoes.

Sprinkle on top grated Monterey or Pepper Jack Cheese- if desired


Chicken & White Bean Chili - regular version

3 cans of Northern White Beans-drained
2 cups salsa- I like the Paul Newman MEDIUM for this
2 cups chicken broth- I like the Better Than Bouillon in a jar
(it is sold by the bouillon cubes)
3-4 cooked chicken breasts-shredded

1-2 cups- grated Monterey or Pepper Jack Cheese-
add this after it has cooked in the crock pot for several hours so it melts nicely.

Cook in crock pot on low for 4 hours. Serve with chips and top with tomatoes.

October dates to remember

October 15th we have another Playdate at 10 am - call Kim Hooper for all the details

Oct 13th - Out to lunch bunch 11 am We will be going to Flower Girls and Dough Boys, 35 North Barrett Ave, American Fork, UT 84003

October 16th, 17th and 20th - UEA weekend + for Alpine School district

October 21st Ward temple night 7 pm session with refreshments afterward at Ken & Kayelene Hornberger's. Be in the chapel at 6:30

October 22nd - Bookclub at 12:30 at LaDawn's. For October we will be reviewing The Brothers #1 in the Great & Terrible Series by Chris Stewart. For November we will be reading The Price We Paid by Andrew D. Olsen. This book was suggested by Bishop Hawkes. December we will have a Christmas book exchange. Plus of course we will be reading Jesus the Christ - We plan to have it completed by the end of the year - so keep reading!


November 18 - Annual Craft Night Enrichment meeting. The Young Women are also invited. So please check the Kitchen counter for all the signups. We will begin at 6:30 and a light dinner will be served.
